Vij Family’s Chicken Curry with Cumin Basmati Rice

This recipe fromthe cookbook Elegant & Inspired Indian Cuisine by Vikram and his wife Meeru Dhalwala, will be taught live this Thursday  and streamed online at 6 pm ET and 3PM PT  at www.vijs.ca.

Ingredients lists and recipes are available here at MetroNews.ca. All ingredients should be readily available in your local grocery store, try hitting up the bulk section to pick up a sampling of Indian spices in small portions, or swing through the international aisle to find them pre-bagged and ready to go.

I can't wait to have a new cooking adventure alongside one of Canada's best chefs in this landmark Canadian cooking event, the first of its kind. I'll be live tweeting how the cookalong goes in my own kitchen at @devourNconquer with the hashtag #vijcooklive.

I haven't found a specific shopping list (other than the ingredients list which is easily translatable), so I've broken the ingredients down into the shopping list below. If you are new to Indian cooking, don't be intimidated or afraid to buy all these new spices at once, as soon as they are in your kitchen, you'll be finding uses for them all the time. Besides, this Chicken Curry is about to become one of your household favourites and you'll need them all again!

Shopping List for Vij's Live Online Cookalong:

Canola Oil

3 large onions

2 inches of fresh ginger root

1 bulb of garlic

2 large tomatoes

3 lbs of chicken thighs, bone in

1 container of full fat sour cream

1 bunch of fresh cilantro

1 small bag of white Basmati rice

 

From the Spice Aisle:

Whole cinnamon sticks

Turmeric

Ground Coriander

Garam Masala

Ground Cayenne Pepper

Ground Cumin

Whole Cumin seeds

Ground Black Pepper & Salt
